Hey everyone! How's your weekend going so far? Mine is doing great as I am quite busy lately with all the orders that I am baking from my kitchen. I have promised to publish our beach house staycation next but because there are still missing details for the post I decided to put it on hold and share the next content that I have already prepared. I've been spending most of my time the whole week in our kitchen baking and trying new pastries to release in Shai Bakes menu. Btw, if you still don't know yet I have opened an online business last year and sell home baked goods that I did myself. While I am brainstorming and doing trials for my next products I also did some sort of personal cooking and baking and decided to take photos of it to share online. I'm not a professional baker nor cook but I want to share with you these 2 healthy recipes that I made out of scratch. 

My mom used to buy apples for us every time she goes to the market. Apple is a staple fruit that never runs out in our kitchen. One time while I was left alone in our house and has no left prepared meal I grabbed an apple and decided to search online on what recipes can I make out of that apple on my hand. Google answered and showed me results such as apple pie, caramel apples or apple bars. Being quite hungry already during that time I decided to go and grab rolled oats to fill in my stomach leaving behind the apple that I have. That gave me an idea to make an oatmeal prep out of what I have in hand. 
Apple Cinnamon Oatmeal is what I came up with. I've been watching too many youtube channels of my favorite vloggers and came up experimenting my own version of it. Here's how I did mine:

Ingredients:

1/2 whole apple (cleaned and sliced)
1/2 tbsp of butter
1/4 tsp ground cinnamon
1 cup water
1/2 cup rolled oats
A pinch of salt
1/2 tsp of vanilla
Milk (optional)
1 tsp sugar

Instructions:

1. In a pan add the sliced apples and butter and cook in a low- medium heat until apples are tender and crisp. 
2. Stir in cinnamon and cook for at least a minute. Some people put nutmeg in their recipe but I personally didn't because I feel like it might already overpower the taste and flavor of the apple.
3. Bring in the oats and water. The ratio of the water to the oats is always 2:1. Bring it to a boil, stir often until you have come to reach the desired tenderness.
4. Once cooked and done remove the heat from the pan and put on the sugar or any kind of sweetener that you have-- maple syrup. Pour in the vanilla and salt too to make it balanced.
5. This is optional but I had mine poured with a milk.

If you are on a diet then this recipe is definitely what you need to try. Would you dare step up and put an upgrade to your usual stove top breakfast meal?

Next on the list is my favorite Apple Cinnamon Muffin. This is supposedly a loaf bread but because my loaf pans were all occupied that time I decided to make it a muffin instead. I followed this recipe from my favorite youtuber, Laura in the Kitchen. I just did a little substitute from her other ingredients plus I decided to omit the latter procedures since I'm making muffins instead of a loaf. Here it is:

For the batter:
1/2 cup vegetable oil
1/2 cup granulated sugar
2 eggs
2 tsp of vanilla
1 1/2 cups APF
1/2 tsp baking powder
1/2 tsp salt
1/2 cup whole milk

For the apple  mixture:
1 large apple cut into small pieces
1/3 cup brown sugar
1 tsp cinnamon

Instructions:
1. Preheat oven to 175 degrees Celsius. Grease and line your cupcake pan and set aside.
2. In a bowl mix together all the dry ingredients and set aside. In another bowl, using an electric mixer, mix together the wet ingredients until everything is incorporated. Lastly add the dry and wet ingredients and mix until combined. You may set the batter aside while you work on the next step.
3. In a bowl combine together the apples, brown sugar and cinnamon.
4. Spread half the batter in your prepared pan, layer half of the apple mixture then pour again the remaining batter and top with the remaining apple mixture. 
5. Bake for about 20-25 minutes then allow to cool on a wire rack
6. I decided to drizzle on some cream cheese frosting on top since I have some left from my red velvet cupcakes.
There you have it! The recipe can give you 12-15 muffins to enjoy. I really love how fluffy and moist these muffins turned out. It is an instant favorite to everyone in our house. Hello everyone! I’m excited to share with you a new hobby that I’ve failed twice (and thought would never do again!!) but decided to try it again and not give up on it. I’m talking about baking!! I’ve tried baking twice, 2 years ago, but I suck at it and told myself that I would never do it again. Fast forward to 2020 when this pandemic hit us, everyone started being creative and started making money out of their passion. I swear, seeing choco brownies, dream cakes, donuts, oreo cheesecakes (you name it!!) being sold by my friends all over my feed makes me drool and crave for it every single time. I came to a point wherein I bought once a week something that I’m badly craving and realized that it’s very unhealthy for my savings. I realized that, why not learn how to do it in on my own? It’s actually hard to start without any equipment. I don’t have measuring cups nor whisker nor even an oven to use! Good thing is that I have an auntie who owns twice of these equipment and lend me her old ones. (If you’re interested in baking and would want to try it but doesn’t have anything to use, try asking for your relatives who has some spare). I started buying the basic ingredients and tried first the easiest recipes. 
First recipe was choco brownies. It’s supposedly a no bake brownies since I’m afraid of using an oven but it was already beyond it’s cooking time and it haven’t set yet. I decided to put it in the oven and set it for 5 minutes. My first attempt after 2 years turned successful because it tasted really good (even if my no bake brownies failed hahaha) Yaaaay!!! Here’s the recipe that I followed for my choco brownies.

On some days I visit at my Ninang’s to annoy her to bake with me. Hahahaha!!! I message her beforehand that I'll be coming with my ingredients with me. Even if she's always busy she always makes time for me. I always want to bake with her so that I can try different recipes because she’s my idol and she’s a pro! We planned to bake a S’mores cake but things didn’t turned out as planned and decided to make the most out of the ingredients that we had at the moment. We ended up baking banana cupcakes instead. Ang layooo sa s’mores nooo! Hahaha! But it smelled really good and tasted delicious! Here’s the recipe that we followed for our banana cupcakes

Lastly, I decided to make oreo brownies and nutty choco brownies. I purposely made it as pasalubong for my fam and my bf’s fam. It was the easiest no-fail that I can do para masarap naman ang pasalubong ko! Ahahahaha! As you can see I also enjoyed taking food flat lays lately and it’s also one of the reasons why I decided to start baking again. Got it from my Ninang!!

I hope you enjoyed this post and it somewhat inspired you to start something out of your comfort zone. There’s no harm in trying! Ask for help from the experts or learn from youtube tutorials if you really can’t get it. Baking will excite youuu!! I ordered some baking tools already and hopefully soon I’ll have my own oven! Pizza, anyone?? I'm feeling (literally) full and happy since this week started because things were slowly falling into place. I'm slowly being able to cope up with my goals again. It's a long hiatus when I was in bukid actually. All I did was to free my mind from all the worries, relax and just enjoy the moment. I think this is my way of releasing my anxiety. Now that I'm back home I finally decided to start moving and continue working on the goals that I set for this year. As for my blog, I have prepared a series of drafts waiting to be posted. Mostly are topics about fashion and food! I'm also back on playing the piano and made a promise to upload a cover either on my youtube channel or IG TV before this month ends. :)  
Out of being productive and boredom, I'm happy to find new inspiration and ideas to try from Pinterest. Watch out for my next blog posts and see for yourself what I've been up to while being locked up at home. Cookie stuffed mallows in ice cream dip by yours truly! :)
I'm so fond of my mom's mini garden at home. She has this collection of mixed plants that she asked from different friends and people. She's collecting cactus and succulent plants and I must say that everything looks so cute! Napa photoshoot tuloy ako! :))
I miss dressing up too. I've been feeling myself lately and I couldn't be happier! I cleaned my closet when we got back home and decided to come up with an outfit to wear on a whole day in front of my laptop (while watching The King on netflix) Sayang naman ang mga pang-alis kung hindi magagamit. Haha! Wearing SHEIN from head to toe. Ahhh, I wanna go on a roadtrip with my friends alreadyyyy! 
I don't know if being in quarantine made me slimmer or chubbier but I'm not really worried though as long as I am able to try and eat the foods that I am craving! I'm an innocent victim of how delicious this pizza is! I had it customized based on my preferred toppings. Plain 4-Cheese, bacon, chicken and green pepperon a thin crust. Yummy!!! Thanks Micah's Catering! I paired it with my favorite original and honey mustard chicken wings (which I wasn't able to include the picture here huhu). Sushi Bake and Yema Cake you're next in line!!! 
Munching carbs and sugar alternately. Ahhh, so good! I'll be back on track, promise! :P

Being in lock down down for 2 months made me try new things that I didn't purposely thought I will do. One of those many things that I did out of boredom (but turned out to be funn!) is COOKING! Ahhh, for the love of food, I know all things are possible!! I've been addicted in cooking and almost all the meals prepared at home were done by me. I'm no expert and the only time that I learned cooking real foods was during this quarantine. I know you're already judging me (I'm judging myself too! Haha!) but for 23 years I've never cooked anything in our house other than sunny side up, rice and boiled egg. Quarantine made me a little crafty and so I tried cooking, but it also made me hungrier that I decided to order some foods that are beyond my cooking skill. Sharing with you some of the foods from my Quarantine Feast that happened at home and outside home before the start official lock down. Let us all drool together!  

Pasta Carbonara is for sure my specialty. I've cooked carbonara twice this quarantine and I'm happy that my family, my boyfriend and my neighbors loved it! I just followed my tita's recipe and learned cooking it through phone call with her instructions.

Kanto Freestyle Breakfast was a food haven that I discovered during my late stay in Taft. I always pass by that restau but I never come in because of the amount of people waiting outside and inside. When I knew that they serve 24/7 I decided to try the hype before I went back to Batangas. I didn't expected to find myself indulging in two consecutive meals before I bid goodbye to Taft. Their foods could be a little pricey but they were all delicious!!
Chicken Cordon Bleu
I've seen this everywhere in facebook and everytime I pass by it I can't help but drool and share it. When I knew that Pau and I's fave restau operates and delivers foods during the quarantine I didn't hesitated and listed down my orders from them. This is one of the foods that I ordered. Octadix never failed me. :)
Aside from Chicken Cordon Bleu I also got Cheesy Embutido from Octadix. It speaks up for its cheesiness. My family and I loved it!!

Pau and I still got to see each other during quarantine whenever he ran errands like grocery and stuff. He came once in our house and brought me my sweet cravings still from Octadix. I couldn't be happier & kilig when I tasted these 2. The choco moist cake didn't even lasted for 3 days. It was so yummy! I also loved the choco balls (I think it's brownies) dipped in my favorite flavor, caramel!! I highly recommend these 2 if you want to satisfy your sweet cravings! :)
Classic Beef Burger
Even if I didn't made the patty I still made the burger anyway! Haha! I decided to make a burger during my brother's birthday instead of buying some. I ordered the burger patties from Burger St. and I'm satisfied because it's beefyyy and it really smells good. The toppings that I included here were ketchup, mayo, lettuce, cheese, tomato and onion. After eating a whole burger I felt again the fullness that I've been missing for so long. I'm so satisfied! :)

My cheesedog bread rolls were inspired by a random recipe from facebook. It was made out of boredom but I'm happy that it turned out fine. It's just basically a rolled cheese strips and hotdog in a loaf bread dipped in milk, egg and bread crumbs. Fry it after and it's good to go! :) Chicken Afritada, on the other hand, is the dish that my family always requests me to cook for dinner. I'm not really fond of eating it unlike adobo but when I got to cook it for several times I already learned to love it. 
Mom's Quarantine Birthday Celeb by yours truly
My mom celebrated her birthday on Day 2 of lock down and it was where my love for cooking started. I decided to take in charge of the cooking and I cooked the usual foods that can be seen on a birthday setup. It was my first time to cook Spaghetti and I'm proud that it tasted really good. Super pinoy style! I also cooked Adobong Baboy (it was the first filipino dish that I learned to cook), fried some breaded chicken wings (we couldn't miss it!!) and some french fries

I used to eat Ramen, Cheesy Beef Donburi and Chicken Karage whenever dine in Tokyo-Tokyo. When the mall was still up during the first week of GCQ we ate at Tokyo-Tokyo (Pau and I's go to restau) and had still all those foods mentioned but with an additional California Tempura Maki in our order. I didn't know that it tasted that good!! I know now what I'm gonna pick first when this ECQ is over!!! Last from the list is my family's all time favorite liempo. I cooked it thrice this ECQ. The first one was a fail because it was too salty (the marinating procedure that I followed was too much!!) but the second and third were just delicious and satisfying! I have my liempo cut orders delivered again and would cook a mouth watering liempo dish for the fam and for my man.

Hey guysss! I've noticed lately how my blog had evolved from being only a fashion and style blog to a "fashion & style + travel blog". My grandparents' hometown, Pagkilatan, has become a popular destination in Batangas because of its beautiful beaches top with the development of Monte Maria Batangas. I've always thought how lucky I am to be spending every weekend in this place without having to spend too much to experience the fullness and relaxation of a 2 days vacation by the beach. I don't usually document my stay in my grandparents' because it just feels like a normal routine for me every weekend to go there but last Sunday was different since I invited 2 guests to spend their weekend with me. Here's my very first take in doing a DIY Day tour in Pagkilatan. And since I have started doing this I know there will be more to come after this post! 
For a hassle free ride, I suggest you drive your own private car (40 minutes away from SM Batangas to Pagkilatan) than commute. If you wish to commute you can take the jeepneys with Batangas-Ilijan or Batangas-Dela Paz/ Pulot signs which leaves every 1 hour in SM Batangas. I think the first trip is at 8:30 in the morning and the fare costs Php 45 one way. There are already resorts in Pagkilatan wherein you can stay for day tours and overnights but if you want a more private and serene place to stay I suggest you to book Jevictoria Breeze Beach House. These pictures were taken there. They also have a kayak for rent just in case you want to do some activity in their beach house. Before you end your trip make sure to visit Monte Maria Shrine. I suggest you go there during sunset. I've been to many places and witness a lot of sunsets (Cebu, Boracay, Bohol, Palawan) but this place in Batangas still got the first spot in my heart.
