Hey everyone! How's your weekend going so far? Mine is doing great as I am quite busy lately with all the orders that I am baking from my kitchen. I have promised to publish our beach house staycation next but because there are still missing details for the post I decided to put it on hold and share the next content that I have already prepared. I've been spending most of my time the whole week in our kitchen baking and trying new pastries to release in Shai Bakes menu. Btw, if you still don't know yet I have opened an online business last year and sell home baked goods that I did myself. While I am brainstorming and doing trials for my next products I also did some sort of personal cooking and baking and decided to take photos of it to share online. I'm not a professional baker nor cook but I want to share with you these 2 healthy recipes that I made out of scratch. 

My mom used to buy apples for us every time she goes to the market. Apple is a staple fruit that never runs out in our kitchen. One time while I was left alone in our house and has no left prepared meal I grabbed an apple and decided to search online on what recipes can I make out of that apple on my hand. Google answered and showed me results such as apple pie, caramel apples or apple bars. Being quite hungry already during that time I decided to go and grab rolled oats to fill in my stomach leaving behind the apple that I have. That gave me an idea to make an oatmeal prep out of what I have in hand. 
Apple Cinnamon Oatmeal is what I came up with. I've been watching too many youtube channels of my favorite vloggers and came up experimenting my own version of it. Here's how I did mine:

Ingredients:

1/2 whole apple (cleaned and sliced)
1/2 tbsp of butter
1/4 tsp ground cinnamon
1 cup water
1/2 cup rolled oats
A pinch of salt
1/2 tsp of vanilla
Milk (optional)
1 tsp sugar

Instructions:

1. In a pan add the sliced apples and butter and cook in a low- medium heat until apples are tender and crisp. 
2. Stir in cinnamon and cook for at least a minute. Some people put nutmeg in their recipe but I personally didn't because I feel like it might already overpower the taste and flavor of the apple.
3. Bring in the oats and water. The ratio of the water to the oats is always 2:1. Bring it to a boil, stir often until you have come to reach the desired tenderness.
4. Once cooked and done remove the heat from the pan and put on the sugar or any kind of sweetener that you have-- maple syrup. Pour in the vanilla and salt too to make it balanced.
5. This is optional but I had mine poured with a milk.

If you are on a diet then this recipe is definitely what you need to try. Would you dare step up and put an upgrade to your usual stove top breakfast meal?

Next on the list is my favorite Apple Cinnamon Muffin. This is supposedly a loaf bread but because my loaf pans were all occupied that time I decided to make it a muffin instead. I followed this recipe from my favorite youtuber, Laura in the Kitchen. I just did a little substitute from her other ingredients plus I decided to omit the latter procedures since I'm making muffins instead of a loaf. Here it is:

For the batter:
1/2 cup vegetable oil
1/2 cup granulated sugar
2 eggs
2 tsp of vanilla
1 1/2 cups APF
1/2 tsp baking powder
1/2 tsp salt
1/2 cup whole milk

For the apple  mixture:
1 large apple cut into small pieces
1/3 cup brown sugar
1 tsp cinnamon

Instructions:
1. Preheat oven to 175 degrees Celsius. Grease and line your cupcake pan and set aside.
2. In a bowl mix together all the dry ingredients and set aside. In another bowl, using an electric mixer, mix together the wet ingredients until everything is incorporated. Lastly add the dry and wet ingredients and mix until combined. You may set the batter aside while you work on the next step.
3. In a bowl combine together the apples, brown sugar and cinnamon.
4. Spread half the batter in your prepared pan, layer half of the apple mixture then pour again the remaining batter and top with the remaining apple mixture. 
5. Bake for about 20-25 minutes then allow to cool on a wire rack
6. I decided to drizzle on some cream cheese frosting on top since I have some left from my red velvet cupcakes.
There you have it! The recipe can give you 12-15 muffins to enjoy. I really love how fluffy and moist these muffins turned out. It is an instant favorite to everyone in our house. Happy April my loves! How are you all doing? I'm back from a 4 days vacation from our beach house (which I'm blogging really soon!) and I feel energized to start again a whole new week of work. Before I get really busy I want to share with you my collection of my favorite jewelries. Just a little background, I am a sucker for accessories when I was still young. I love accessorizing- wearing blings and matching colors with my outfit and made accessories the main foundation of my fashion and blogging career. As I grow older I learned the art of minimal accessorizing and decided to revamp my whole collection with basic and classic pieces that I will never get tired of wearing. 


This is my mini travel jewelry organizer that I got as a gift from my cousin last Christmas. I love that it's convenient to carry around anywhere I go plus it really holds my jewelry nicely without having my necklaces entangled. I also love the color because it's white and it has some blings and glitters on the cover which defines my personality- basic and chic!


Here are my favorite necklaces: The world & airplane necklaces were both from SHEIN. When I saw these tandem necklace it made me miss travelling and exploring new places and countries. As of now I only have these pieces to remind me that travelling will always be a part of me and I will always look forward to my next destination when it is safe already. The key necklace was from a local shop in our hometown named Hiyas by Cara (@hiyasbycara). Aside from the fact that the owner of the shop is my friend I also loved the collection of the beautiful necklaces that they offer. Everything is chic and classy. I still have few to go back to- the Belle and Ariel necklaces! Last on the picture is my Donti necklace. I've been purposely searching for a tooth necklace ever since to the point that I almost had mine personally made. Good thing a dear friend of mine recommended me the shop (@ningning_ph) from instagram. The owner is a co-studentist of mine and I'm happy that she was able to come up with a donti necklace such as the one in the picture above. I'm so kilig! I still have another favorite necklace given by mom but I wasn't able to take a picture of it. It's pendant is a heart shaped 24K gold which she gave me as a souvenir from her Dubai trip 3 years ago.


This pair of earrings are my most used ones because it's basic and definitely goes with anything. It's from my cousin who gave me this jewelry organizer. You know me too well!


I'm not a fan of rings. I only had 3 ever since. The one which I wore when I was still a toddler from my mom, the other one which I wore when I was in my early teenage years which is originally a single earring that has lost its pair turned into a ring and the ring which I'm wearing which I call the "princess ring" given by Pau 2 years ago. This ring made it to my favorites simply because it's given to me by a very special man. Anything that he gives me turns out to be my favorites. Haha :)

 Hey everyone! I'm happy that I'm really back to blogging and consistently publishing posts of personal and some new discoveries that get my interest online even if I'm super busy with my everyday work. On weekdays I do brainstorming for blog content and taking/baking orders of my offered pastries and cakes in my growing business while on weekends I work as a dental assistant at my auntie's dental office and do a site visit in our under construction beach house. My life is pretty busy and I sometimes forget to stretch and do some home workout. I'm binge eating for the past few days and I can't help but feel like I gained much weight in my belly and legs. 

As I was organizing and planning for a comeback home workout I listed some of the things that I want to try including in my routine. I have two in mind- one is doing jumping rope exercises and the other one is the one that caught my attention online, gymnastics. It's not really something new for me because I was doing that during PE classes when I was in Highschool and college but it thrills and excites me to at least try it again as something to help me develop balancing, coordination and flexibility. The movements involved there doesn't only gives me enough strength but also a nicer and more toned figure. 

One thing that I'm looking forward to aside from gymnastics itself is the fact that I'll be using tumble mats!!! I've never tried one and it thrills and excites me at the same time.
